Veg biryani recipe, how to make Vegetable biryani

Biryani, most popular recipe of India, is made of rich ingredients such as basmati rice, whole spices, spice powders and vegetables or meat (chicken or mutton). Biryani makes our meal special. I am a big fan of biryani. So I try different biryani recipes at home and I will bring them to you soon. Whole spices and spice powders are the key ingredients for biryani recipe. If you love biryani then keep store of whole spices. Below procedure describes the veg biryani or Vegetable biryani procedure. In a short procedure for veg biryani, we fry spices and then add vegetables. Later we add rice, spice powders and roast for some time. Finally we add double quantity of water and boiled niecly. We can use different vegetables in biryani.

Ingredients for veg biryani recipe:

  1. Rice 🍚: 2 cups
  2. Onion: 1 medium, sliced vertically
  3. Carrot 🥕: 1 medium, sliced in circles
  4. Potato 🥔: 2 medium, chopped in 1 inch cubes
  5. Green peas : half cup,
  6. Tomato 🍅: 2, chopped in medium size
  7. Green chillies: 2, sliced vertically
  8. Cashew nuts: 7
  9. Cumin seeds: half table spoon
  10. Red chilli (whole): 3
  11. Cinnamon sticks: 2
  12. Cardamom: 2
  13. Star anise: 2
  14. Black pepper: 5
  15. Nutmeg and mace: 1
  16. Shajeera: half table spoon
  17. Bay leaf: 2
  18. Curry leaves: few
  19. Ginger garlic paste: 1 table spoon
  20. Coriander powder: 2 table spoons
  21. Turmeric powder: 2 table spoons
  22. Garam masala powder: 1and half table spoon
  23. Red chilli powder: 2 table spoons
  24. Salt: as required
  25. Coriander leaves: half cup

Procedure:

  1. Wash and drain the rice and place it a side. Take a big vessel and place it on medium flame.
  2. Now add 3 table spoons of oil. Once oil becomes hot add star anise, cardamom, black pepper, nutmeg and mace, bayleafs, cinnamon sticks and shajeera. Fry for  a while.
  3. Now add potato cubes, carrot pieces and cashew nuts. Saute for 2 minutes.
  4. Next add onions , green chillies and saute for 1 minute.
  5. Now add green peas and ginger garlic paste, saute for 1 minute.
  6. Now add cumin seeds, red chillies and curry leaves and saute for half minute.
  7. Now add drained rice , turmeric powder, coriander powder, garam masala powder/ biryani masala powder, red chilli powder.  Mix well and fry for 3 minutes on low flame.( Don’t burn the rice).
  8. Now add 4 cups of water. Add salt and bring it to boil.
  9. Once the water started boiling, reduce the flame to low and close the vessel with lid. Cook for 10 minutes. Stir in between.
  10. Finally add corainder leaves and mix well.

Now delicious biryani is ready to serve. Serve hot with raita.

Notes
Don't burn the whole spices and vegetables. Cook on medium or low flame.
If you are using basmati rice, then don't over stir the rice because it will make rice gummy.
