Tindora fry recipe-ivy gourd stir fry recipe
Tindora fry(dondakaya fry) or ivy gourd stir fry is a tasty fry recipe and very easy to make. In the preparation of this tindora fry (dondakaya fry) recipe, we chop tindora very thin circles. We, first, give tadka with garlic, cumin seeds, Channa dal, green chillies and curry leaves. Then, we add finely chopped tindora in this tadka and cook untill done. It goes well with rice as a side dish for rasam or sambar. You can have with roti as well.

Ingredients:
- Tindora (ivy gourd/dondakaya): 1/2 kg
- Green chillies: 4, vertically sliced
- Split bengal gram (senaga pappu): half table spoon
- Cashew nuts: 8 (optional)
- Curry leaves: few
- Garlic: 5, crushed
- Cumin seeds(jeera): half table spoon
- Salt: as required
Procedure:
- First wash the tindora(ivy gourd/ dondakaya) and slice in a very thin circle shape.
- In a curry pan heat 2 table spoons of oil. Once oil becomes hot, add split bengal gram, garlic cloves, jeera and cashew nuts and saute for half a minute.
- Now add green chillies, curry leaves to it and give a nice stir.
- Next add tindora (ivy gourd) pieces, add salt and turmeric powder. Now mix well and close the lid.
- Cook for 15 to 20 minutes on low flame. Stir in between.
- Finally adjust salt and turn off the stove.
