Sponge dosa recipe  is a soft and spongy popular dosa, from Karnataka. It is prepared with black gram, rice and flattened rice. It is also called as a set dosa, a famous street food in Indian streets. This dosa is served with vegetable curry, chutney or sambar.

It is little different from regular dosa. Regular dosa is usually thin and crispy but sponge dosa is  thick, fluffy and smaller in size compared to regular dosa. We can seen small pores on sponge dosa. I am using buttermilk to soak urud dal, because it gives little sourness to the dosa, which enhance the taste.

Sponge dosa can be served as a breakfast or light dinner or in kids tiffin boxes.

Sponge dosa recipe is a soft and spongy popular dosa, from Karnataka. It is prepared with black gram, rice and flattened rice. It is also called as a set dosa, a famous street food in Indian streets. This dosa is served with vegetable curry, chutney or sambar.
Ingredients
  • Black gram/ urud dal/ minapappu : ½ cup
  • Rice : 2 cups
  • Flattened rice: 1 cup
  • Fenugreek seeds: ½ table spoon
  • Buttermilk : 2cups
  • Salt: as required
Instructions
  1. Wash and rinse black gram, rice and fenugreek seeds. Soak black gram/ urud dal/ minapappu in buttermilk for 6 hours and also soak rice and fenugreek seeds in water for 6 hours.
  2. After that, grind urud dal, rice and fenugreek seeds into smooth batter by adding required water. Grind flattened rice as a smooth batter by adding required water. Do not add too much water.
  3. Now mix flattened rice batter, black gram batter and rice batter in a big vessel and allow the batter to undergo fermentation for 12 hours. Then add required salt to the batter and mix well. Sponge dosa batter is ready.
  4. To make dosa:
  5. Heat dosa pan, add one drop of oil at the center of the pan and rub entire pan it with onion slice .
  6. Now add one ladle of dosa batter in the center of the pan and rotate the batter in clockwise with backside of the ladle. Make it thick or thin as you like.
  7. Sprinkle ¼ th table spoon of oil on the edges of dosa and cook it niecley for 1 minute on medium flame. You can smell nice dosa aroma here and you can notice forming bubbles in the dosa. Now flip the dosa carefully and cook the back side of the dosa for a minute.
Notes
You can soak urud dal/ black gram without buttermilk also.
