Onion masala stuffed brinjal / gutti vankaya ulli karam petti kura: It is a most famous and delicious recipe from Andhra Pradesh cuisine. Where Brinjal / egg plant/ vankaya  recipes are very special. Onion masala stuffed brinjal / gutti vankaya ulli karam petti kura: It is a most famous and delicious recipe from Andhra Pradesh cuisine. Where Brinjal / egg plant/ vankaya  recipes are very special. As andhra people loves brinjal (gutti vankaya) and prepare more varities using brinjals. Like brinjal masala curry (vanakya kura), Onion masala stuffed  brinjal (vankaya ulli karam petti kura), Brinjal stir fry(vanakaya vepudu), Sesame seeds brinjal curry(Vankaya nuvvu pappu kura) etc. This Eggplant curry goes well with rice or roti. Ingredients
  • Split Bengal gram/ chana dal: half tablespoon
  • Split black gram /urud dal: half tablespoon
  • Cumin seeds: half tablespoon
  • Red chilies: 4, whole
  • Coriander seeds/ dhaniya: 1 tablespoon
  • For dry gravy:
  • Onions: 1
  • Ginger: a 2-inch piece
  • Garlic: 5 flakes
  • curry leaves: few
  • Turmeric powder: half teaspoon
  • Masala powder: half tablespoon
  • Salt: as required
Instructions
  1. Heat half tablespoon of oil in a pan, add channa dal, urud dal, red chilies, cumin seeds, and coriander seeds one by one and saute for 2 minutes. Then remove from pan and keep aside till it gets cool. And then make a fine powder. (It is the spice powder we use for stuffing)
  2. Blend onion, ginger, and garlic into a fine paste.
  3. Heat 2 tablespoons of oil in a pan, add little cumin seeds and let them splutter. Then add onions paste, turmeric powder, curry leaves, and salt. Saute till golden brown.
  4. Meanwhile, cut the brinjals in + shape and stuff the Spice powder we made.
  5. And add these brinjals to the sauteed onion paste and cook for 5 minutes. Later add masala powder and any leftover spice powder we made. Cook for 5 minutes on slow flame.
  6. Cook till brinjals nicely done. Adjust salt and spicy.
  7. Garnish with chopped coriander leaves.
