Medu vada(indian donut 🍩) is a famous south Indian recipe prepared with urud dal(split black gram). It can be served as a breakfast or snack. Coming to the texture of vada, it is crispy outside and soft inside.

Medu vada preparation starts with soaking of urud dal atleast for 4 hours: then grinding of the same to obtain  smooth urud dal batter. Next, prepare a donut shape with urud dal paste and fry it using hot oil until golden colour appears. We can add finely chopped onions, green chillies, dry coconut pieces, finely chopped ginger pieces, and coriander leaves ( add these according to your taste) to the batter to enhance the taste. Medu vada tastes awesome with coconut chutney or peanut chutney or sambar.

Preparation time: 4 hours ( for soakingurud dal)

Ingredients:

  1. Urud dal: 1 cup
  2. Onion: 1 medium, vertically chopped
  3. Green chillies: 3, finely chopped
  4. Ginger: 1 inch pieces, finely chopped (optional)
  5. Coriander leaves: handful, finely chopped
  6. Salt : as required

Procedure:

  1. Wash and soak urud dal for 4 to 5 hours.
  2. Next grind this urud dal as a smooth paste without adding water( if needed add very little amount of water)
  3. In urud dal paste, add finely chopped onions, green chillies, ginger pieces, finely chopped coriander leaves and salt and mix well.
  4. In heavy bottomed vessel or kadai, add 2 cups of oil(or required amount of oil for frying). Heat on a medium flame for 7 to 8 minutes.
  5. Wet your hands  and take lemon sized batter and flatten it with your ✋. Make a hole in the centre of the vada.
  6. Drop this vada into the hot oil, and fry both sides of the vada till golden color appears. Cook 3-4 Vadas at a time. Cook under a medium flame.
  7. Now drain oil from vada and place it on Kitchen tissue paper.
  8. Repeat 5,6,7 steps for remaining batter.
