Lemon rice (Pulihora) recipe| how to make lemon rice- silpa’s kitchen

Lemon rice is one of my  favourite recipe. It is generally made on special occasions like festivals and poojas . It is one of the main traditional recipees in Andhra Pradesh. My friends are biggest admirers of the lemon rice prepared by me.

Lemon rice is one variant of flavoured rice like tamarind, citron etc. But it is distinct in its taste, although preparation method for all these variants are same.

Although major ingredients list is exhuastive, fresh curry leaves and green chillies are the taste makers and add distinct flavour to the lemon rice. . Fried peanuts will give richness to the recipie.. Totally this is an amazing recipe , makes your day more special… Prepare it.. have it.. enjoy it..

Ingredients :

 

  1.  Rice : 1 cup
  2. Peanuts : 1 table spoon
  3. Split Bengal gram ( chana daal/ senaga pappu) : 1/2 table spoon
  4. Split black gram ( urud daal / mina pappu) : 1/2 table spoon
  5. Mustard seeds ( Rai / avalu) : 1/2 table spoon
  6. Ginger : little piece ( crushed)
  7. Green chillies : 4 , chopped vertically
  8. Curry leaves : few
  9. Lemon : 2
  10. Red chillies : 3
  11. Turmeric powder : 1 table spoon
  12. Salt : 1 table spoon ( adjust accordingly)

Procedure :

  1. Cook rice non sticky means each grain should separate. Place this rice in a wide plate / vessel ,let it little cool.
  2. Fry peanuts nicely.
  3. Heat 3 table spoons of oil in a pan, Add crushed ginger, fried peanuts give a little stir. Add Split Bengal gram ( chana daal/ senga pappu) , Split black gram ( urud daal / mina pappu) and mustard seeds ( Rai / avalu) fry for 2 minutes on medium flame.
  4. Add vertically sliced green chillies and red chillies, fry for 1/2 minute.
  5. Add curry leaves and turmeric powder fry for 1/2 minute and turn off the stove.
  6. Add this to the rice and mix well.
  7. Squeeze lemon juice in into bowl , add salt to it mix until salt dissolved in it. Add this to rice and combain well.

Tips :

  1. Adjust salt, lemon juice and green chillies according to your taste.
  2. Fried peanuts or cashew nuts will give richness to the recipie..
  3. Use medium flame or slow flame while frying.
