Lauki curry with green chilli paste | bottle gourd curry | anabakaya(sorakkai) curry

Lauki (bottle gourd/ doodh/ anabakaya) is a easily degistive Vegetable. Lauki curry can be  prepared in different ways.  I am using green chilli based variant, that is lauki curry with green chilli paste,which gives a nice taste. If you are spicy lover, then you like this curry most. Because lauki curry has mild taste, so by adding chilli paste, you can enjoy the curry more.

I experimented this recipe based on Maharastrian style. One of my best friends is a Maharastrian. I learnt pumpkin curry using chilli paste. It was absolutely delicious.  So I tried, this lauki curry with green chilli paste. Thank you Ashwini for introducing delicious curry. I will upload pumpkin curry soon.

You can make different curries with bottle gourd. One of the special recipe is lauki khadi ( anabakaya majjiga pulusu), a must try recipe. For different curry recipes go to different vegetarian curries with simple procedures.

Cooking details for lauki curry with green chilli paste :

Preparation time: 15 minutes

Cooking time: 20 minutes

Ingredients:

  1. Lauki/ bottle gourd/ sorakkai : 250 gms
  2. Onions: 2 , finely chopped
  3. Green chillies: 4
  4. Garlic cloves: 4, crushed
  5. Cumin seeds/jeera : half table spoon
  6. Salt : as required

Procedure:

  1. Wash bottle gourd and peel the skin. Now chop it into 1/2 inch size pieces.
  2. Heat 2 table spoons of oil in a curry pan. Once oil becomes hot add crushed garlic cloves and jeera. Saute for a while.
  3. Next add finely chopped onions. Saute for 1 minute. Next add lauki (bottle gourd) pieces, turmeric powder and salt. Mix well and close the lid. Now cook for 10 to 15 minutes on slow flame.
  4. Meanwhile make paste of green chillies in a mixer jar. ( We are using 4 chillies only, so you get little amount of paste. That will be sufficient.)
  5. Once lauki (bottle gourd) pieces are properly cooked, then add green chilli paste and cook for 5 minutes (till raw smell completely goes out).
  6. Now add half cup water and half cup milk (milk is optional). Cook for 2 minutes. Finally adjust salt.

Now spicy  lauki curry is ready to serve.

Notes:

  1. Add green chillies according to your taste.
  2. While making green chilli paste and while adding it to curry, use spoon instead of hand. Because it may give some burning sensation.
