Ivy gourd / tindora fry / dondakaya fry with peanut powder

Dondakaya fry with peanut powder/ ivy gourd fry / tindora fry is a crunchy , nutty fry recipe. It is very simple to prepare. Tindora fry goes well with rice or roti and it is a perfect side dish for dal / rasam / sambar / curries. Peanut powder will give an additional richness to the curry and healthy too.

Tindora fry / dondakaya vepudu can be packed in lunch boxes for kids/ office going people. It will be fresh and tasty till afternoon. The peanut powder can be readily prepared and stored in an air tight container and you can use it whenever you need. This powder goes well in potato fry also.

Ivy gourd fry / tindora fry/ dondayka fry with peanut powder is a crunchy , nutty fry recipe. It is very simple to prepare. Tindora fry goes well with rice or roti and it is a perfect side dish for dal / rasam / sambar / curries. Peanut powder will give an additional richness to the curry and healthy too.
Ingredients
  • Ivy gourd/tindora/donadakya : 250 gms, slit thinly
  • Green chillies: 3, slit
  • Curry leaves: few
  • Cumin seeds: half tea spoon
  • Garlic cloves: 4, crushed
  • Red chillies: 2(whole)
  • Salt: as required
  • for peanut powder:
  • peanuts: 1 table spoon
  • channa dal/split bengal gram: half table spoon
  • red chilli: 1, whole
  • coriander/ daniya seeds: half table spoon
Instructions
  1. Dry roast ingredients as mentioned under peanut powder. Later make coarse powder of it.
  2. In a pan, heat 1 table spoon of oil, later add garlic cloves, cumin seeds, red chilies and curry leaves. Let them splitter.
  3. Now add chopped ivy gourd/ tindora/ dondakaya pieces, green chilies and add required salt. Now mix well the contents and stir for 10 - 15 minutes on a low flame(till ivy gourd pieces completely cooked)
  4. Once ivy gourd are completely done, add 2 - 3 spoons of coarsely grinded peanut powder and mix well, cook for 2 minutes.
Notes
Cooking should be on low flame.
