Coriander pulav is a delectable, greenish spiced rice recipe. We enrich this pulav by adding veggies. Coriander pulav is easy to make recipe. It goes well with onion raita , boondi raita or any gravy curries.
Ingredients
  • Bastmati rice : 2 cups, boiled (you can also use regular rice)
  • Onion: 1 medium, sliced
  • Carrots : 1 medium, diced
  • Green peas: ¼th cup
  • Potato: 1 medium, dieced
  • Green chilles: 4, slit
  • Coriander paste: ¾th cup
  • Cinnamon stick: 1
  • Cardamom : 2
  • Cloves: 3
  • Star anise: 1
  • Bay leaf: 1
  • Pepper corns : 4
  • Cashew nuts: few, fried
Instructions
  1. Heat 1 table spoon ghee and 1 table spoon oil in a pan, add cardamom, pepper corns, Bay leaf, cloves, star anise, cinnamon stick and shajeera. Saute well.
  2. Add dieced carrots, potato cubes saute for 2 minutes. Next add onions and green chilles, saute for 2 minutes.
  3. Later add green peas, saute well. Once veggies done add corainder paste (cilantro paste) and saute till oil separates.
  4. Now add rice and required salt. Mix well and cook for 2 minutes on low flame. Garnish with cashew nuts.
Notes
Add green chillies according to your taste.
