Chicken bhuna recipe- Bhuna is a cooking process where spices are gently fried in plenty of oil to bring out their flavor. Bhuna curry is an extension of that process where meat is added to the spices and then cooked in its own juices which results in deep strong flavors but very little sauce says the curry house. Bhuna masala is easy to make curry. The main ingredients are whole spices, onions, and tomatoes. We are not making onion paste here. Instead, we are using finely chopped onions and tomatoes.

Chicken bhuna curry goes well with rice, roti, naan or bread. It is an easy dinner recipe too.

Chicken bhuna recipe means cooking chicken along with spices in oil till spices caramelized. Bhuna chicken is easy to make curry.
Ingredients
  • Chicken: half kg
  • Onions: 2 medium, finely chopped
  • Tomato: 1, finely chopped
  • Ginger garlic paste: 1 tablespoon
  • Cashew paste: 2 tablespoons
  • Turmeric powder: 1 teaspoon
  • Cumin powder: 1 teaspoon
  • Curry leaves: few
  • Salt: as required
  • Whole red chilies: 7
  • Coriander seeds: 1.5 tablespoons
  • Cloves: 4
  • Peppercorns: 6
  • Star anise: half
  • Cinnamon stick: 1
Instructions
  1. Heat Kadai/ pan, add red chilies, coriander seeds, star anise, cinnamon stick, cloves, and peppercorns. Dry roast these ingredients and make a fine powder and set aside.
  2. Heat 2 tablespoons of oil, add half teaspoon cumin seeds, once splutters add finely chopped onions, ginger garlic paste, curry leaves, turmeric, and salt. Cook till oil separates.
  3. Now add cumin powder and give a nice stir. Add chicken and cook for 10 minutes. Now add prepared bhuna masala powder and cook for 5 minutes.
  4. Now add finely chopped tomatoes and cook till oil separates. Now adjust salt and spicy. Add cashew paste and cook for 2 minutes.
